With our approach, we make the originally meat-based dish an affordable vegan ready meal for anyone who misses the savory and umami taste of the original bacon, bringing back the traditional taste to everyone on a plant-based or vegetarian diet – and might encourage those considering a vegan diet to take first steps. We have been wearing the V-Label and the German and European organic certificate since the beginning of our journey and only use high-quality ingredients for our Flammkuchen. It binds the other ingredients and provides the structure, fluffiness and mouthfeel that is so typical for marshmallows and gelatin alternatives haven’t been able to imitate. In all examples known to us the structure is too chewy, the product isn’t fully aerated or the shelf stability is lacking.
After more than two years of testing we were able to develop a recipe that provides all above traits of a very good marshmallow. We replaced the gelatin with carageenan but most importantly we were able to redesign the production process to make the recipe feasible in industrial production. The marsmallows, when coated in chocolate, have a shelf stability of minimum 10 months. An often heard comment from consumers is that they can’t tell the difference between the carageenan and the gelatin containing recipes.

We believe that climate protection starts in small steps that everyone can do – and Food for Future is our contribution.

1. We fill our fruit juices into environmentally friendly glass packaging, the energy requirements of the plant and the cold store are met to a large extent with green energy with the help of solar panels. In 2020 and 2021 the energy needs of our production were met 100% using green energy.
2. We intentionally created our unique flavor combinations in such a way that domestic fruit producers can provide most of the raw materials.
3. Sustainability also includes what we do with the remains of production. We believe that these delicious vegetables and fruits are nature's gifts, so we also treat the parts that cannot be put in bottles with respect: they are given to the charming inhabitants of animal farms. In 2021, we handed over a total of 10,000 kg of apple pomace as feed.
